Portobello Mushroom Swiss Melt

Melts, sandwiches, and subs are some of my favorite things to eat – I say this as if I don’t enjoy eating everything.  This is such a simple and quick lunch.  It takes less than 15 minutes to prepare everything, and can easily be changed to use whatever you have in your fridge.

  • 3-4 medium portobello mushrooms, sliced
  • 1/4 medium onion, sliced
  • 1 clove of garlic, minced or finely chopped
  • swiss cheese
  • 1 hard roll, sliced, or two pieces of bread
  • salt and pepper to taste
  1. Saute mushrooms, garlic, and onions until they begin to brown; remove from heat.
  2. Place the roll open face on a baking pan; top with veggies (one or both sides, your choice).
  3. Place a slice of cheese on top; grated cheese would work just as well.
  4. Broil on high for a few minutes, until cheese is melted and begins to bubble and brown.
  5. Serve open face, or put together and serve as a sandwich.
